We can consider Macallan 12 Year Old Double Cask the successor of the old 12 Year Old Sherry Oak. As a special feature it was made of Macallan malts matured for 12 years in ex-sherry casks. In this case, the term “double cask” means that the spirit has been matured in both American and European Oak casks. The delicious and comforting flavors of American Oak - vanilla, citrus and toffee – are in focus, while the traditional Macallan flavors – rich fruitiness and spiciness – provide the perfect backdrop for the drink.
The 30-year-old The Macallan Double Cask is an exceptional, perfectly balanced single malt whisky, matured for 30 years in a harmonious union of sherry seasoned American and European oak casks, to create a sweeter, warmer taste and character. The spirit is the crown jewel of The Macallan double cask range, its aroma of blends fresh gingerbread, sweet caramel, red apple, fig and vanilla bean. Its taste reflects the soft melody of cinnamon, ginger, Madagascar vanilla, dried fruits and oak. The finish is dominated by a fusion of sweet oak, soft spices and toffee.
Highland Park's 15-Year-Old Viking Heart Scotch whisky is a rich single malt with golden colour and complex aroma. European and American oak sherry seasoned casks were chosen to create this spirit, which ensure the taste balance. Lastly, the refill casks allow the gentle heather peat and lightly fruity character to shine through. The process of making Highland Park whiskies is unchanged since 1798 and is based on 5 keystones: aromatic peat, hand-turned floor maltings, sherry seasoned oak casks, cool maturation and cask harmonisation.
